If you’re looking for an easy way to make your baked goods vegan or even just to reduce your consumption of eggs, try a flax egg substitute! A flax egg is simply a mixture of flaxseed meal and water and can be used as a replacement for chicken eggs for most baked goods like cakes, cookies, and sweet breads. BONUS: flaxseed meal is high in fiber, omega-3 fatty acids, and lignans, which are plant compounds that may have anti-cancer properties – yes, please!

The “recipe” for a flax egg substitute is simply a ratio: For each egg that you want to replace, combine one tablespoon of flaxseed meal with three tablespoons of water. Just let the mixture sit for a few minutes until it thickens, and you are good to add it to your recipe!

Flaxseed meal is readily available at most grocery stores, either in the health food section or near the other baking ingredients. You can also grind your own, if you prefer – just buy whole flaxseeds and grind them in a coffee grinder or food processor.

Flax eggs work best in recipes that call for one to two eggs. They add moisture and act as a binding agent. Besides baking, you can also use them in savory dishes like vegan burgers and meatballs to help hold the ingredients together. Flaxseed has a very mild taste and will not overpower your other ingredients.

As an example, when recreating my family’s favorite banana chocolate chip muffin recipe, I swapped out the egg for a flax egg with no noticeable difference in taste or texture.
