going plant-based is about to get easier
TRUTH: plant-based doesn't have to be complicated.
I adore a good meal - whether it's a creative appetizer from a fancy restaurant, or, even better, a mess of vegetables right from the farm.
Have you ever skipped over a recipe because it called for too many things you don't have on hand, and you don't even know what three of them are?
Me too. And while I don't have anything against trying new things, not everyone has the time or money to shop around for exotic ingredients to use once and then leave moldering in the back of the pantry (I'm looking at you, powdered jicama root).
I'm a writer, recipe creator, vegetable fan, and life-long animal lover who has big dreams about saving animals.
I didn't grow up eating a plant-based diet. My father was a supermarket meatcutter for 47 years - so we ate meat and potatoes at every meal. Vegetables were kind of an afterthought, and usually consisted of frozen peas or succotash.

Fast forward a few decades: I slowly learned my way around the produce department and started educating myself on where our food actually comes from. I'd been leaning towards a plant-based diet for years, but after getting my certification in Plant-Based Nutrition from Cornell University and making small but significant changes, I saw the health benefits for myself - my cholesterol dropped 70 points! The more I learned, the more I wanted to help others make the leap: for their health, for the health of the planet, and to end animal suffering.
Now I help busy people to enjoy the benefits of a plant-based lifestyle - without a lot of fuss, and without demanding perfection.
